Moroccan Rice Salad

Moroccan Rice Salad
A flavour filled meal to warm the body and nourish the soul. 

Ingredients:

  • 3 cups basmati rice, cooked til al dente and set aside
  • 2 Tbsp coconut oil
  • 1 red onion
  • 1 carrot
  • 1 zucchini
  • 4 green beans, top & tailed and de-stringed
  • 2 cloves of garlic
  • 1 red capsicum, de-seeded and diced
  • Half a red chilli and half a green chilli, de-seeded and finely chopped
  • 8 dried dates, de-seeded and finely diced
  • 2 tomatoes, finely diced
  • Half bunch coriander (cilantro), pluck leaves
  • ¼ cup mint, leaves only
  • ¼ bunch shallots
  • 1 cup cooked chickpeas (for easy version, use canned chickpeas)
  • 1 cup cooked lentils (for easy version, use canned lentils)
  • 1 Tbsp chermula
  • ¼ tsp salt
  • 2 Tbsp tamarind paste
  • ¼ tsp ground dry cumin
  • Wedge of lemon, preserved lemon, and coriander to serve

Method:

  1. In a wok, heat coconut oil. Add onion and sweat til translucent, add garlic and stir for one minute, add tamarind paste, carrots, zucchini, tomato, green beans, cooked chickpeas, lentils, cumin, salt, chermula, dates, stir well and turn heat to low.
  2. Place lid and let steam/permeate for 10 mins
  3. Add rice and stir well, then add coriander, mint, shallots and stir well, turn off heat and serve

To serve:

Sprinkle with coriander, add a wedge of lemon and preserved lemon, and lots of love.   Annalise Braakensiek is an internationally recognised covergirl and Logie Award nominee.
