Organic Whole Red Lentils are yummy and easy to prepare and cook up quickly, but become soft and do not hold their shape well. They are best used to thicken a dish or in purees. They are most commonly used in Middle Eastern or Indian food dishes but can also be used for dhal, soups, stews & lentil patties.
Preparation: Pre-soak them before cooking to remove any remaining Saponin, a naturally occurring coating on seeds and pulses.
Depending on your desired use if you cook them for around 15 minutes they will start to turn into a puree, cook for 25 minutes and you will get mush. If you plan to use them for a salad or lentil patty then cook them for around 10-15 minutes, you want them to still hold their shape with a tender but firm texture. The easiest way to make sure you don’t over cook them is to check on your lentils as they cook.
