Toasted Pecan, Banana and Date Granola

GF, DF, Nightshade free, Vegan.

Method:

  • Preheat oven to 140°c and line a large baking tray with baking paper
  • Melt coconut oil over low heat until liquid, but not hot
  • If available, grind the coconut sugar down to a fine powder using a Nutribullet. If this isn’t an option it is fine to leave as is
  • Combine the coconut oil, maple syrup, coconut sugar, salt, miso paste and ground spices in a bowl and stir well. Put aside for now
  • Combine all remaining ingredients except for dried banana and dates in a large bowl. Add the sugar and oil mixture to the dry mix and stir well. Use hands to ensure everything is coated consistently
  • Note: Any dried fruit can be substituted and any additional fruits can be added!
  • Spread on the tray and bake in the oven for 25-35 minutes
  • Check every 10 minutes and toss the mix on the tray regularly to ensure it is evenly cooked. About ⅔ way through baking, add the banana and dates, mix and put back in the oven
  • Remove from the oven and let cool to room temperature to ensure a crispy granola
  • Serve with milk or yoghurt and enjoy! Store leftover granola in an airtight container in the cupboard
