Macadamia & Pumpkin Spread

  • Preheat oven at 180°c
  • Cut pumpkin into pieces and remove seeds, place on an oiled baking tray and roast for about 30 min
  • Roast macadamias, tossing midway, until golden (about 15 min)
  • Mix turmeric, olive oil and salt in with the macadamias
  • Roast for a couple extra minutes (about 2-4 min.)
  • When pumpkin is soft, take out of oven and remove skin
  • Put the macadamia and pumpkin in a food processor or blender with lime juice and blend until smooth
