GF, DF, Nightshade free, Vegan.
Ingredients:
- 140g / 1 cup Pitted dates
- 3 tbsp Coconut oil (melted)
- 2 tbsp Maple syrup
- 60-80 ml / 3-4 tbsp Hot water
- 75g / ½ cup Raw almonds
- 75g / ½ cup Pepitas
- 50g / ½ cup Raw pecans (or substitute with
walnuts) - 45g / ¼ cup Chia seeds
- 40g / ½ cup Shredded coconut
- 40g / ½ cup Dried Jaboticaba (or substitute with dried
cranberries or other dried fruit of choice) - Pinch salt
Method:
- Line a 13x30 cm loaf tin with parchment paper
- In a food processor, combine almonds, pepitas, pecans and coconut until finely chopped and crumbly. There should be no large chunks remaining, but be careful not to overblend
- Transfer the mixture to a mixing bowl and stir through chia seeds and 3 tbsp of hot water; set aside
- Now, using the food processor (no need to wash) blend the dates until finely chopped; add to the nut and seed mixture and combine
- Add coconut oil, maple syrup, salt and dried fruit; mix thoroughly
- Check the consistency of the mixture by taking a pinch and squeezing together; it should stick together and hold its shape. If the mixture is too crumbly, add another tbsp of hot water
- Spoon the mixture into prepared loaf tin, spread out evenly and push down firmly with hands or the back of a spoon, making sure the top is even
- Transfer to the fridge and leave to set for at least 1 hour
- When firm, remove from the tin by carefully lifting the parchment and placing the nut and seed bar on a chopping board
- With a sharp knife, cut into 14 even sized bars approx 4x6.5 cm
- Keep in the fridge to store
