Coconut & Kaffir Lime Chia Pudding

Coconut & Kaffir Lime Chia Pudding

GF, DF, Vegan (option).

Ingredients - Chia Pudding:

  • 1/4 cup chia seeds
  • 2 cups filtered water 

  • 1-2 tablespoons raw honey or maple syrup (adjust to your preferred sweetness)
  • 4 tablespoons coconut yoghurt 
  • 2 whole kaffir lime leaves, very finely chopped 
  • pinch of salt
  • 1 tsp vanilla powder

 Ingredients - Berry Compote:

  • 350g mixed berries 
  • 2-3 tbsp coconut sugar

  • 1 x star anise 
  • 1/2 cinnamon stick

 Method - Chia Pudding:

  • Add the chia seeds & filtered water to a mixing bowl and combine well. Leave to sit for 15 minutes  for the chia to swell. Add the vanilla, chopped kaffir lime leaves, salt & coconut yogurt. Leave  covered in the fridge to soak overnight.

Method - Berry Compote:

  • Add the berries, coconut sugar, star anise & cinnamon to a heavy bottomed pot and cook uncovered for 15-20 minutes on a medium heat or until the juice has evaporated and caramelised.
