GF, DF, Nightshade free, Vegan.
Ingredients:
- 1.5 cups Brown basmati rice
- 1 ⅔ cup Coconut cream
- 1 cup peeled Banana, roughly chopped
- 1 cup Black sapote flesh
- 2 tbsp Lime juice
- ½ cup Coconut Sugar
- 1 tsp Ginger powder
- 1 tsp Cinnamon powder
- 2 Bananas for garnish
Method:
- Cook the rice gently, with 1 ½ of the volume of water, with the lid on until completely absorbed
- In a pot, add chopped bananas, black sapote, coconut sugar, coconut cream, ginger & cinnamon. Simmer for 2 min
- Add the cooked rice with 150 mls of water and simmer for 5 min or until you have a creamy texture. Add the lime juice
- Heat a small pan over medium heat, cut the 2 bananas lengthways, coat with coconut sugar and caramelise them on the pan
- Serve in bowls and garnish as you like
- Note: You can adjust this recipe, for example; add in nuts, replace the sapote with other fruits of your liking
