GF, DF, Vegan.
Ingredients
- 1/2 raw almonds
- 1/2 cup sunflower seeds
- 6 dried dates (Soak these in fridge for 8 or so hours)
- 1.5 cups filtered water
- 1 tsp cinnamon powder
- 1 tsp cardamom powder
- 1.5 tsp rose water
- 1 tsp vanilla powder or essence
- 1/3 cup maple syrup
- Pinch of salt
Method
- In plenty of water, soak the almonds, sunflower seeds and dates in a bowl in the fridge for 8 hours or overnight.
- Once they’re soaked, strain the ingredients (you can keep 1.5 cups of water for blending).
- Add all the remaining ingredients to a high speed blender and blitz for 30 seconds to 1 minute or until smooth.
- Pour the mixture into popsicle moulds (this will make about 8-9), if you only have 6 moulds keep some batter in the fridge and once the other popsicles are frozen, remove and re-fill to use up the rest of the mixture.
- Alternatively, line a dish with baking paper and pour the mixture inside. Place in the freezer overnight. Cut into bite sized cubes and enjoy as a cooling summer treat.
