Almond, Rose & Cardamom Popsicles

GF, DF, Vegan.

Ingredients:

Method:

  • In plenty of water, soak the almonds, sunflower seeds and dates in a bowl in the fridge for 8 hours or overnight.
  • Once they’re soaked, strain the ingredients (you can keep 1.5 cups of water for blending).
  • Add all the remaining ingredients to a high speed blender and blitz for 30 seconds to 1 minute or until smooth.
  • Pour the mixture into popsicle moulds (this will make about 8-9), if you only have 6 moulds keep some batter in the fridge and once the other popsicles are frozen, remove and re-fill to use up the rest of the mixture.
  • Alternatively, line a dish with baking paper and pour the mixture inside. Place in the freezer overnight. Cut into bite sized cubes and enjoy as a cooling summer treat.
