GF, DF, Nightshade free, Vegan.
Ingredients:
- 750 ml Olive oil
- 40 ml Apple cider vinegar (or to taste)
- Juice of 1 lemon or lime (or pulp from a fermented or preserved lemon)
- 4 Ice cubes
- 250 gm Raw organic walnuts
- 3 bunches Mixed herbs (Basil, Parsley & Tarragon)
- 100 gm Leafy greens, blanched (ex. spinach, kale, chard)
- 7 gm Salt
- 5 gm Nutritional yeast
- 3 gm Pepper
Method:
- Pick herbs from stems, roughly chop and leave aside
- Use a food processor with the double blade attachment to mill the walnuts to a fine consistency, take out and put aside
- Add the blanched greens, herbs, ice cubes and all wet ingredients and pulse until combined and smooth (adding the ice cubes will keep the mixture from heating while blending to ensure the mix stays vibrant green)
- Add the walnuts back in with nutritional yeast, salt and pepper and blitz until combined
- Enjoy with pasta, toast, through scrambled eggs or as a pizza sauce
