Spirulina Energy Balls

Loaded with flavour and simple to whip up these raw superfoods, spirulina energy balls pack quite a punch! Made with protein-rich collagen, lots of healthy fats, and a nutrient-dense greens powder, these energy balls make a great snack during the day, post-exercise or as a snack to kids' lunch boxes.

INGREDIENTS

1 cup dates soaked in warm water for 20 minutes.
¼ vegan collagen or collagen powder, your choice.
1 teaspoon spirulina powder or chlorella
2 tablespoons coconut flour
⅛ cup Shredded Coconut unsweetened
⅛ cup Hemp Hearts
2 tbs water use the water from soaking the dates.
⅓ cup dried blueberries or goji berries
A handful of nuts your choice: Brazil nuts, cashews, peanutsAlternatively- add activated buckwheat for crunch.
1 tablespoon of melted coconut oil
Few drops of vanilla extract

Instructions

Soak the dates in warm water to make them easier to blend.
In a powerful blender, blend the dates until a paste forms. Add the rest of the ingredients and blend until sticky but still chunky. If the mixture is too sticky, add more nuts. Add more water from dates and melted coconut if the mix is not sticky. Roll some coconut oil onto your hands (to prevent sticking) and line a tray with parchment paper.
Roll the mixture into balls (about 12-14) using your hands. Cover with more hemp seeds if you wish.
Place the balls on the parchment paper and place them into the freezer for thirty minutes.
When ready to eat, you can grab them right out of the freezer or let them thaw for a first few minutes first.
