Smoky Black Beans with Lime Smashed Avocado on Toast
Black beans are full of iron and protein and are a nutrient-rich powerhouse.  This recipe is fresh and light and has a little Mexican vibe going on with the avocado, lime juice and smoked paprika. All those flavours create a mouth-watering explosion of tangy-smoky deliciousness that will keep you going long into lunchtime. Avocado, everyone’s favourite breakfast food, is also chock-full of protein and the good fats, and is a superfood-rich palmful of goodness! If you don’t have time to cook the beans, use tinned black beans and then this dish becomes a new, quick go-to breakfast any day of the week!  


  • 1 cup black (turtle) beans, soaked overnight in 3 cups filtered water, plus
  • 3 cups extra, for cooking
  • 1⁄4 cup lime juice
  • 1 teaspoon quality salt
  • 1⁄2 teaspoon smoked paprika
  • 5-6 large basil leaves, shredded
  • 2 tablespoons cold-pressed olive oil
  • 1⁄2 small red onion, very finely diced (optional)
  • 1 small garlic clove, minced (optional)
  • 2 small tomatoes, finely diced
  • 1 tablespoon sesame seeds
  • 4 slices of toast, bread of your choice
  • Drizzle of cold-pressed olive oil, lime juice, black pepper, smoked paprika, shredded basil leaves and carrot curls, for garnishing
  • Lime or lemon wedges, to serve

Lime smashed avocado:

  • 2 medium avocados
  • 1⁄4 cup lime juice
  • 11⁄2 teaspoons quality salt


  1. Rinse the soaked black beans and cook in the extra 3 cups of filtered water for 50-70 minutes or until soft.
  2. Rinse under cool water and place drained beans in a mixing bowl. Add the lime juice, salt, smoked paprika, basil, olive oil, red onion, garlic, tomato and sesame seeds.
  3. Lightly mash and combine ingredients until they are mixed well.

Lime smashed avocado:

  1. Roughly mash the avocado with the 1⁄4 cup lime juice and salt.
  2. Place toast on serving plates and top with the black beans.
  3. Dollop with the avocado smash, drizzle with oil and add lime juice and garnishes.
  4. Serve with your favourite cup of tea! Delectable!
