This is a simple and moorish snack that can be used to top salads or breakfast bowls for a sweet and salty crunch.
Ingredients:
- 2 cups cashew nuts
- 3 Tbsp maple syrup
- 3 Tbsp black sesame ground
- 1 Tbsp coconut oil
- 2 Tsp freshly grated ginger or 1/2 tsp ground ginger
- Good pinch natural sea salt
Method:
- Freshly grate ginger if using fresh
- Grind 1 cup of black sesame seeds in a spice grinder or high speed blender (store leftover in an airtight container in the fridge to use for salad dressings or toppings)
- Heat pan to medium high, add coconut oil
- Add ginger and maple syrup, stir for 30 seconds
- Add cashew nuts and ground black sesame, toss nut mixture until cashews are golden brown
- Sprinkle with a good pinch of natural sea salt
- Remove nut mixture onto a tray to cook and crispen
- Use as a salad or breakfast bowl topper or simply snack on
- Store any leftovers in an airtight container
