Fasolada (Cannellini Bean Soup)

Fasolada (Cannellini Bean Soup)

GF, DF, Vegan.



  • Boil white beans, dry for 40-45 minutes. Alternatively, soak the beans in water overnight and then follow the same steps
  • Dice carrots small bits (6mm cubed) and finely chop leek, onion and celery.
    In a medium saucepan over medium heat, add 3 tbsp of olive oil and saute all vegetables for about 2 minutes
  • Add diced tomato to saucepan and saute, mixing the vegetables, for 2 minutes
  • Strain the white beans and add them into the saucepan with the vegetables, cover the beans and vegetables with boiling water. Put the lid on and let simmer for 35-40 minutes or until the beans are tender
  • At the end of the cooking time, add remaining olive oil and boil until thick and creamy. Remove from the heat, top with chopped parsley and serve

Fasolada is a traditional Greek dish, sometimes known as the national dish of Greece. The beauty of this dish is that you can add more or less of anything to suit your taste. It is best served with some type of bread to soak up all the liquid!

Olive oil retains all of its previous vitamins and minerals when consumed raw, which is why we add olive oil at the end of cooking. Be sure to use extra virgin olive oil, if possible. This will lift the flavour and help the soup get thick and creamy.
