Coconut Macaroon (Congolais)

  • Preheat oven at 160°c
  • In a medium saucepan over medium heat, place the sugar and 200 ml of water. Cook slowly until the temperature reaches 130°c
  • While sugar syrup is cooking, mix all the dry ingredients together
  • Mix in the egg whites
  • Mix in the sugar syrup once it reaches 130°c
  • Form the mixture into balls (about the size of a golf ball), not too compacted, place on a lined baking tray
  • Bake for 20 min or until golden & crispy
  • Cool it down on a cooling rack
  • Store in an airtight container for 2 weeks
