Banana & Coconut Porridge with Ginger & Plum Compote
Plums are absolutely delicious right now and this breakfast keeps your body with long lasting energy throughout the day.


Ginger & Plum Compote

  • 1/4 cup filtered water
  • 5 ripe plums, halved
  • 1 tsp cinnamon
  • 1 tsp fresh ginger, finely grated
  • 1/4 tsp vanilla bean paste or powder*
  • 2-3 tbs agave syrup* or maple syrup, to taste



  1. Simmer oats in the soaking water over a low-medium heat for 15-20 minutes (While porridge is cooking, make the ginger & plum compote).
  2. Add coconut cream, banana, salt and agave syrup; cook for another 5 minutes. Turn off heat.

Ginger & Plum Compote

  1. Place all ingredients except agave into a small saucepan. Bring to the boil and then reduce heat. Gently simmer until soft. The plums stew quickly and will be ready at the same time as the porridge.
  2. Add agave at the end; cook for another 1-2 minutes. The plums will be quite tart, so add more or less agave to taste. I like it tart!
  3. Spoon porridge into the bowls, top with warm compote and garnish with almonds.
