Adzuki Bean & Millet Patties

Adzuki Bean & Millet Patties

GF, DF, Nightshade free, Vegan.



  • Preheat oven at 190°c / 375°f
  • Rinse pre-soaked beans
  • Add beans to a large pot with 4 cups water. Simmer, covered for 45-60 minutes until tender. Drain well and cool
  • Rinse Millet. Pour millet and 1 cup water into a pot. Simmer, covered 15-17 minutes or until all the water has been absorbed
  • Heat a medium pan over medium heat. Once hot, add 1 tbsp olive oil, garlic and spinach. Saute for 2-3 minutes. Remove from the pan and keep in strainer
  • Add adzuki beans to a food processor with all remaining ingredients. Blend for 1-2 minutes until combined
  • Shape the patties as you like
  • Heat a medium pan over medium heat. Once hot, add 1 tbsp olive oil, then add the patties. Pan fry on both sides for a few minutes until they get a slight crust
  • Transfer to the oven and bake for 15 minutes or until golden brown.
