GF, DF, Nightshade free, Vegan.
Ingredients:
- 1 cup Adzuki beans (soaked in cold water overnight)
- ½ cup Hulled millet
- 5 cups Water
- 50 gm Spinach (or greens of choice)
- 2 tbsp Olive oil
- 1 clove Garlic
- ½ tsp Salt
- ½ tsp Pepper
- 1 tsp Parsley (chopped)
- 1 tsp Thyme (chopped)
- ½ tsp Fennel seeds
- 2 tsp Psyllium husk
Method:
- Preheat oven at 190°c / 375°f
- Rinse pre-soaked beans
- Add beans to a large pot with 4 cups water. Simmer, covered for 45-60 minutes until tender. Drain well and cool
- Rinse Millet. Pour millet and 1 cup water into a pot. Simmer, covered 15-17 minutes or until all the water has been absorbed
- Heat a medium pan over medium heat. Once hot, add 1 tbsp olive oil, garlic and spinach. Saute for 2-3 minutes. Remove from the pan and keep in strainer
- Add adzuki beans to a food processor with all remaining ingredients. Blend for 1-2 minutes until combined
- Shape the patties as you like
- Heat a medium pan over medium heat. Once hot, add 1 tbsp olive oil, then add the patties. Pan fry on both sides for a few minutes until they get a slight crust
- Transfer to the oven and bake for 15 minutes or until golden brown.
