Moong dhal is simply split mung beans - whole mung beans that have been hulled and split in half, exposing the yellow interior. Splitting the bean removes the outer hull, which shortens cooking time significantly and makes them easier to digest than whole mung beans. They cook down into a soft, creamy texture that makes them ideal for dal, soups, and Indian-style dishes where a smooth, satisfying consistency is the goal.
Moong dhal is a source of plant-based protein, dietary fibre, iron (non-heme), zinc, folate, calcium, and complex carbohydrates. Combining moong dhal with a grain like rice gives you a complete protein - a pairing at the foundation of Indian cooking for thousands of years and the basis of kitchari, Ayurveda's most celebrated nourishing meal.

How to cook it
Soaking: soak moong dhal for 1 to 2 hours before cooking to further reduce cooking time and improve digestibility. Discard the soaking water and rinse well before cooking. Note that moong dhal may contain some grit - wash thoroughly before soaking.
Basic dal (serves 4): rinse 1 cup of moong dhal, then simmer in 3 cups of water or vegetable stock for 20 to 30 minutes until completely soft and beginning to break down. In a separate pan, heat ghee or coconut oil with cumin seeds, mustard seeds, turmeric, and a pinch of asafoetida until fragrant. Add garlic and ginger, cook for 1 minute, then stir through the cooked dal. Finish with lemon juice and fresh coriander.
Kitchari: moong dhal and basmati rice cooked together in a single pot - the traditional Ayurvedic comfort meal. Add warming spices (turmeric, cumin, coriander, ginger), seasonal vegetables, and finish with ghee. Deeply nourishing and very easy to digest.
