Mung beans (Vigna radiata) are small, green-hulled legumes native to South Asia and widely used across Indian, Chinese, and Southeast Asian cooking. Santos Organics Mung Beans are ACO certified organic and grown in Australia.

Whole mung beans are distinct from moong dhal: moong dhal is mung beans that have been hulled and split, which makes them cook faster and have a creamier, smoother texture. Whole mung beans retain their hull, which gives them a firmer texture after cooking and makes them excellent for sprouting. Both are available in the Santos own-brand bulk range.

How to use them

Before cooking: soak whole mung beans for at least 4 to 8 hours or overnight. Discard the soaking water and rinse well before cooking. Note that mung beans may contain some grit - wash thoroughly before soaking.

Cooking whole mung beans: drain soaked beans and simmer in fresh water for 30 to 45 minutes until tender but holding their shape. Season generously - mung beans take well to cumin, turmeric, ginger, garlic, and coriander.

How to sprout mung beans:

  1. Soak 400g of mung beans in a large bowl with at least 5 times the volume of water overnight (12 to 24 hours)
  2. Drain and rinse well, then transfer to a colander or strainer inside a bowl
  3. Cover with a damp clean tea towel
  4. Rinse thoroughly 2 to 3 times daily
  5. After 2 to 3 days the beans will have sprouted and are ready to use
  6. Refrigerate sprouts and use within 5 to 7 days

Mung bean sprouts can be eaten raw in salads, tossed through stir-fries, or lightly blanched. Sprouting increases their digestibility and makes the nutrients more bioavailable.

A few ways to use them:

  • Dal: whole mung beans cooked down with warming spices, tomato, and finished with a ghee or oil tarka (tempering) of cumin seeds, mustard seeds, and ginger
  • Curries: added to coconut milk-based curries with vegetables and aromatics
  • Soups: simmered into vegetable or broth-based soups for body and protein
  • Salads: sprouted and tossed through green salads raw or lightly blanched
  • Pakoras: sprouted mung beans used as a base for crispy fritters
