Rapadura whole cane sugar brings a deep, almost caramel-like complexity from the whole cane, while Cristallino cane sugar provides a fine, clean sweetness for balance. How to use it
As a couverture, this chocolate performs across a wider range of applications than standard baking chocolate:
- Tempering and moulding: tempers well to produce a glossy, snappy finish in chocolate moulds, shells, and bonbons. Temper milk chocolate to 28 to 29°C
- Enrobing and dipping: fruits, truffles, biscuits, confectionery, and caramels
- Ganache: melt with warm cream at a 2:1 chocolate to cream ratio for a firm ganache, or 1:1 for a softer, more pourable result
- Baking: chopped into chunks for cookies, brownies, blondies, and rocky road where you want visible chocolate pieces with real flavour
- Chocolate bark: melted, poured onto baking paper, and topped with nuts, dried fruit, or sea salt
- Buttercream and frosting: melted and cooled into Swiss meringue or American-style buttercream
- Patisserie: as a component in mirror glazes, tart fillings, and dessert components
Chopping and tempering
Chop from the block using a serrated knife or chocolate chopper, working from the corner. The block is easiest to work with at around 18 to 20°C. For tempering: melt to 45 to 50°C, cool to 27°C using the tabling or seeding method, then bring back to working temperature of 28 to 29°C. Properly tempered milk chocolate will set with a clean snap and glossy surface.
Storage
Store in a cool, dry place away from direct sunlight and strong odours. Ideal storage temperature 16 to 18°C. Do not refrigerate (condensation causes sugar or fat bloom). Wrap unused portions tightly in baking paper or cling film after cutting. Best before January 2027.
Shipping note: milk couverture is sensitive to heat. In warm weather, Santos packs with care but cannot be responsible for softening or bloom caused by transit temperatures. For summer orders, express shipping and a monitored delivery address is recommended.
