Dalhousie Organic Strawberry Jam is exactly what a good jam should be: organic strawberries at 47%, organic sugar, lemon concentrate, and pectin. No preservatives, no artificial colours, no artificial flavours, no added water, no high-fructose corn syrup. The lemon concentrate is there for natural acidity and to help the pectin set. Pectin is a naturally occurring carbohydrate extracted from citrus fruit peels, used here as a gelling agent. That is the full ingredient list.
The result is a jam that tastes like strawberries rather than strawberry flavouring. Bright, fruity, with a clean sweetness and a texture that spreads without being either runny or rubbery.
