Coconut butter is not the same as coconut oil - and understanding the difference is the whole product. Coconut oil is just the fat extracted from coconut meat. Coconut butter is the entire coconut meat - flesh, fibre, and oil together - blended into a thick, concentrated paste. It's denser, richer, more intensely coconutty, and more versatile in cooking than coconut oil alone.

Ceres Organics Coconut Butter is made from 100% certified organic whole coconut meat, nothing removed and nothing added. The result is a thick, opaque paste with an intense natural coconut flavour and a naturally sweet, slightly grainy texture from the retained coconut fibre. BioGro certified organic, GE-free.

Important - how coconut butter behaves

Coconut butter is solid at room temperature and below - it will be firm or hard in the jar depending on the season. This is completely normal and doesn't affect quality. To soften it, place the sealed jar in a bowl of warm water for 5 to 10 minutes and stir well once it loosens. It melts into a liquid when warmed and sets solid again when cooled. In warm weather it may already be soft or liquid in the jar.

How to use it

Coconut butter works across sweet and savoury cooking, and as a direct spread:

  • Toast and bread: spread warm coconut butter on sourdough with a drizzle of honey or sliced banana - warm the jar first so it spreads easily
  • Raw desserts and bliss balls: a tablespoon or two adds rich coconut flavour and helps bind raw slices, energy balls, and raw cheesecake bases
  • Chocolate glazes and coating: melt with a little coconut oil for a quick chocolate-style coating that sets hard at room temperature (magic shell style)
  • Smoothies: a tablespoon blended into a coconut, mango, or tropical smoothie
  • Thai and Indian curries: stir through at the end of cooking for a richer, more complex coconut flavour than coconut cream alone
  • Porridge and overnight oats: a spoonful stirred through adds creaminess and a natural sweetness
  • Icing and frosting: whipped with a little vanilla and maple syrup for a dairy-free coconut frosting

Storage

Store at room temperature. Solidification at cooler temperatures is completely normal - see the note above on how to soften it. Do not refrigerate (it will become very hard and difficult to use). Keep the lid tightly closed. No refrigeration needed after opening.
