Doña Cholita Totopos are made by a Mexican-Australian family in the Northern Rivers, NSW, using the traditional Mexican method of nixtamalization - a centuries-old process where dried corn is soaked and cooked in an alkaline solution before milling. Nixtamalization improves the flavour, texture, and nutritional profile of the corn in ways that standard corn flour processing simply doesn't, producing a chip with a deeper, more authentic corn flavour and a satisfying crunch that holds up under guacamole, salsa, and loaded dips without going soggy.

Doña Cholita was founded by Jefte and Joey Juarez, a Mexican-Australian couple based in the Northern Rivers, to bring authentic Mexican totopos and tortillas to Australian kitchens. Every product is made fresh using traditional Mexican recipes and certified organic ingredients. Their totopos are sold across Australia's leading organic and natural food retailers.
