Doña Cholita Chipotle Totopos start the same way as the white corn chips: certified organic nixtamalized maize flour, fried in non-GMO rice bran oil, salted with Himalayan pink salt. Then chipotle in adobo, chipotle powder, and paprika go in, giving the chip a warm, smoky heat that builds gradually rather than hitting you all at once.
Chipotle is smoked, dried jalapeño - vine-ripened, red jalapeños that are wood-smoked before drying. The result is a chilli flavour with far more depth than fresh heat alone. Smoky, slightly earthy, with a mild fruitiness underneath. These are a step up from the white corn in flavour without tipping into overwhelming heat.
