Doña Cholita Blue Corn Totopos are made from certified organic blue maize, a heritage corn variety with a deep, slightly earthier flavour and a naturally striking dark colour. Where white corn chips are mild and clean in flavour, blue corn has more character - nuttier, denser, with a slight mineral note that makes them taste distinctly more like actual corn.
Blue maize is one of the original maize varieties cultivated in Mesoamerica for thousands of years. Using it for totopos is as traditional as it gets. Doña Cholita nixtamalizes the blue maize (soaking and cooking in an alkaline solution before milling), which is the same process Mexican households and tortillerias have used for centuries to unlock the corn's full flavour and improve its nutrition.
