Sol Organics was founded in Byron Bay in 2014 by Jen, who started the business with a single product in mind: clean, healthy, nutrient-rich grass-fed ghee made using traditional Ayurvedic methods. Every jar is still made in small batches by hand in Byron Bay using the same approach.
Ghee is clarified butter - butter that has been slowly heated until the milk solids and water separate and are removed, leaving behind pure golden butterfat. The clarification process removes the milk proteins (casein) and lactose, making ghee naturally lactose-free and casein-free. It also gives ghee a significantly higher smoke point than butter (approximately 250°C vs butter's 175°C), making it far more stable at high cooking temperatures.

How to use it
Ghee works anywhere butter or cooking oil would, and better than either in high-heat applications:
- Frying and sauteing: the high smoke point makes it ideal for high-heat cooking without burning or producing acrid smoke
- Roasting: toss vegetables in melted ghee before roasting for a rich, buttery flavour
- Baking: substitute for butter or coconut oil in most baking recipes at a 1:1 ratio
- Toast and bread: spread at room temperature for a rich, nutty alternative to butter
- Baked potatoes: a generous knob on top with sea salt
- Popcorn: drizzle over freshly popped corn for a classic cinema-style result
- Curries and Indian cooking: the traditional cooking fat for Indian cuisine, adds authentic flavour to curries, dals, and rice dishes
- Eggs: cook scrambled eggs or omelettes in ghee for a richer flavour than butter
Storage
Store at room temperature in the sealed jar - ghee does not require refrigeration. It will be solid at cooler room temperatures and liquid in warmer weather. Both states are completely normal and don't affect quality. Keep the lid tightly closed and use a clean, dry spoon each time to prevent contamination. Shelf life is long when stored correctly - typically 12 months or more from production.
