Vallentine's Honey 250g
A rare Australian raw honey, hand-jarred in small batches in the Northern Rivers.
Vallentine's Honey is the work of a Byron Bay family who have been keeping bees in the region for years, producing one of the most distinctive raw honeys in Australia. Every jar is independently tested and NPA certified, with this batch reaching 32.8+ NPA (equivalent to 1884 MGO). That puts it among the most concentrated naturally-occurring honeys produced in the country.
The flavour is deep, complex, and slightly herbaceous, with a thick, slow-pouring texture. A single teaspoon stirred into hot water with lemon, drizzled over Greek yoghurt, or eaten straight from the jar is enough to taste why this honey has a cult following.

Storage
Store at room temperature, out of direct sunlight. Like all raw honey, Vallentine's may naturally crystallise over time. This is a sign of authenticity, not spoilage. To return to liquid, stand the sealed jar in a bowl of warm water (never microwave or heat above 40°C, as this damages the natural enzymes that make raw honey what it is).
A note on NPA
NPA stands for Non-Peroxide Activity. It's an independently lab-tested measure of certain naturally-occurring compounds in some Australian and New Zealand honeys, and it's used as a quality and authenticity marker. The higher the number, the more concentrated those compounds are in the honey. Vallentine's is independently tested by an accredited laboratory and certified at 32.8+ NPA.
