Real maple syrup has a complexity that imitation syrups (which are mostly high-fructose corn syrup and artificial flavour) don't come close to. The flavour deepens with grade: this is a Grade A Dark Amber, which has a more pronounced, rounded maple character than the lighter grades used in fine dining. It pours easily, dissolves well into batters and dressings, and caramelises cleanly under heat.

- Baking: substitute for white sugar at a 3:4 ratio (use 3/4 cup maple syrup per 1 cup sugar, reduce other liquids slightly). Works in cakes, muffins, cookies, and banana bread

- Marinades: combined with tamari, garlic, and ginger for a sweet-savoury glaze on salmon, tofu, or tempeh

Storage
Store in a cool, dry place before opening. Refrigerate after opening and use within 12 months. Maple syrup will not crystallise if stored correctly. If it does, warm gently in a bowl of warm water to return to liquid.
