The chocolate is made from three core ingredients: organic cane sugar (Cristallino), organic cocoa butter, and organic whole milk powder at 31%. It's smooth, creamy, and refined with Bourbon vanilla for a clean, aromatic white chocolate flavour. Fair trade certified under Rapunzel's Hand in Hand programme, which goes beyond standard fair trade to fund long-term development projects directly with farming communities.

The 2.5kg block form means you chop or shave what you need, keeping the unused portion wrapped and stored. It tempers well, melts cleanly, and holds up in applications where compound chocolate would fail.

How to use it

  • Melting and dipping: fruits, biscuits, pretzels, and confectionery. Chop finely for even melting, use a double boiler or microwave in short bursts
  • White chocolate ganache: melt with warm cream at a 2:1 chocolate to cream ratio for a thick ganache. Adjust ratio for your application
  • Baking: chunks chopped from the block add a more complex flavour than pre-made chips in cookies, muffins, blondies, and rocky road
  • Patisserie and tarts: as a base layer, glaze, or filling component
  • Rocky road and confectionery: sets firmly and coats well at room temperature
  • Buttercream and frosting: melted and cooled into Swiss meringue or American-style buttercream

Chopping and tempering

The block is easiest to work with when slightly warm (around 18 to 20°C). Use a serrated knife or chocolate chopper to break into chunks or shavings as needed. For applications requiring a shiny, snappy finish (dipping, moulding), temper to 27 to 28°C using the tabling or seeding method.

Storage

Store in a cool, dry place away from direct sunlight and strong odours. Ideal storage temperature 16 to 18°C. Do not refrigerate (condensation causes bloom). Wrap unused portions tightly in baking paper or cling film after cutting. Shelf life: see best before date on packaging.

Shipping note: white chocolate is sensitive to heat. In warm weather, Santos packs with care but cannot be responsible for softening or bloom caused by transit temperatures. For summer orders, express shipping and a monitored delivery address is recommended.
