Ceres Organics Red Thai Curry Paste is the most robust and versatile of the three Thai curry pastes in the range. Where yellow is mild and turmeric-forward and green is bright and citrus-floral, red leads with the deeper, earthier heat of chilli combined with a broader spice base - coriander, cumin, and lime leaves alongside the lemongrass and galangal shared across all three pastes. The result is a fuller-bodied, more complex flavour that holds its own alongside stronger proteins like beef, duck, lamb, and larger prawns.
The heat is medium-hot - noticeably warmer than yellow, comparable in intensity to green but with a different character. Green curry heat tends to be more immediate and citrus-forward; red curry heat is deeper and builds gradually. Both are accessible for regular curry eaters. If cooking for mixed heat tolerances, use slightly less paste and add extra coconut cream to moderate.

How to use it
Basic red curry (serves 4): heat a tablespoon of coconut oil in a large pan, add 2 to 3 tablespoons of paste and cook for 1 to 2 minutes until fragrant. Add your choice of protein or vegetables, stir to coat, then add 400ml of coconut cream and simmer for 15 to 20 minutes. Finish with fresh Thai basil, fish sauce or tamari, and a squeeze of lime. Serve over jasmine rice.
