Black beans are full of iron and protein and are a nutrient-rich powerhouse. I’ve been trying to get them into my diet more regularly for ages. This is kinda my version of baked beans on toast! It feels fresh and light and has a little Mexican vibe going on with the avocado, lime juice and smoked paprika. All those flavours create a mouth-watering explosion of tangy-smoky deliciousness that will keep you going long into lunchtime.
Avocado, everyone’s favourite breakfast food, is also chock-full of protein and the good fats, and is a superfood-rich palmful of goodness!
If you don’t have time to cook the beans, use tinned black beans and then this dish becomes a new, quick go-to breakfast any day of the week!

Lime smashed avocado:

  1. Roughly mash the avocado with the 1⁄4 cup lime juice and salt.
  2. Place toast on serving plates and top with the black beans.
