Three Olives Certified Organic Extra Virgin Olive Oil is made the traditional way: organically grown olives, hand-picked and cold-pressed using old-world production methods, with no filtering. Leaving the oil unfiltered preserves the natural olive particulates that carry flavour and aroma, giving the oil a slightly cloudy appearance and a richer, more complex character than filtered EVOO.

The flavour is earthy, mild, and fruity, with a gentle peppery finish characteristic of quality extra virgin oil. It's approachable enough for everyday cooking and good enough to use as a finishing oil straight from the bottle. Tunisia is one of the world's oldest olive-growing regions, with cultivation records dating back thousands of years and growing conditions that produce olives with a distinctly Mediterranean character.

How to use it

  • Everyday cooking: sauteing, stir-frying, and roasting at low to medium heat. Extra virgin olive oil is stable up to around 190°C
  • Dressings and vinaigrettes: the mild, fruity character works in simple lemon and olive oil dressings, balsamic vinaigrettes, and tahini-based dressings
  • Finishing oil: drizzle over soups, pasta, grilled fish, roasted vegetables, hummus, and bruschetta just before serving
  • Dipping: pour into a shallow bowl with a pinch of sea salt, cracked pepper, and dried herbs alongside good bread
  • Marinades: combine with garlic, lemon, and herbs for meat, fish, or vegetable marinades
  • Baking: substitute for butter in Mediterranean-style cakes, focaccia, and flatbreads

Storage

Store in a cool, dark place away from direct sunlight and heat. Olive oil does not improve with age once bottled — use within 18 months of production or before the best before date on the bottle. Do not refrigerate (it will solidify and cloud, though this reverses at room temperature and doesn't affect quality).
