The hull contains a higher concentration of calcium, fibre, and minerals than the inner seed alone - but it also contains naturally occurring compounds that give unhulled tahini its characteristic slight bitterness and deeper, earthier flavour. The colour is noticeably darker than hulled tahini, ranging from golden-brown to dark tan.
