Ceres Organics Young Jackfruit is harvested young - before the fruit ripens and sweetens - and packed in water with sea salt and organic lime juice. At this stage the jackfruit is firm, fibrous, and almost flavourless, making it one of the most effective plant-based meat substitutes available. Cook it with bold seasoning and it absorbs flavour thoroughly, pulling apart into strands with a texture that closely resembles slow-cooked shredded meat.

This is the chunk format - pieces of young jackfruit that you shred, pull, and season yourself during cooking. If you want jackfruit that arrives pre-shredded and ready to heat, the Ceres Organics Pulled Jackfruit (also available at Santos) is the faster option. The chunk format gives you more control over texture and shred size.

Young jackfruit vs ripe jackfruit

Young jackfruit and ripe jackfruit are completely different products. Young jackfruit is green, unripe, and starchy - used as a savoury meat substitute. Ripe jackfruit is sweet, soft, and eaten as a fruit. This product is young jackfruit only - it is not sweet and is not used as a fruit.

How to use it

Basic method: drain and rinse the jackfruit, then heat in a pan or oven with your choice of seasoning. As it heats, use a fork or the back of a spoon to pull and shred the pieces into strands. Continue cooking until the edges begin to caramelise slightly before adding sauce.

Some combinations that work well:

  • Pulled BBQ jackfruit: toss shredded jackfruit with smoked paprika, cumin, garlic powder, chipotle, and a generous amount of BBQ sauce. Serve in a bun with coleslaw
  • Jackfruit tacos: season with cumin, coriander, chilli, and lime. Serve in corn tortillas with avocado, pickled red onion, and coriander
  • Jackfruit curry: add to a pre-made curry sauce and simmer until the jackfruit absorbs the flavours
  • Jackfruit fried rice: shred finely and stir-fry with tamari, sesame oil, garlic, ginger, and vegetables
  • Jackfruit sandwich: season like pulled pork, pile into a sourdough roll with pickles and mustard
