SO Organic Puy Lentils 1kg
Certified organic Puy-style lentils in the 1kg bulk bag. Small, dark, firm-textured, and the most flavourful lentil in the Santos range. ACO certified, sourced from Canada.
Puy lentils take their name from Le Puy-en-Velay in the Auvergne region of France, where the combination of volcanic soil and mountain climate produces a small, dark lentil with a distinctive peppery, earthy flavour and a firm texture that holds its shape far better than red or standard green lentils when cooked. These Santos Organics Puy lentils are grown in Canada to the same style and variety - small, dark green-black with mottled colouring, and the same firm bite and complex flavour profile.
Puy lentils do not need soaking before cooking, which makes them one of the most convenient legumes in the pantry - rinse, simmer, drain, and they’re ready. They cook in 20 to 25 minutes and come out firm, nutty, and deeply flavoured. Their robust texture means they work cold in salads just as well as warm in soups and stews.
Source of plant-based protein, dietary fibre, iron (non-heme), magnesium, and B vitamins. Combining lentils with a grain gives you a complete protein.

How to cook them
No soaking required, though soaking for 1 to 2 hours reduces cooking time slightly and may improve digestibility. If soaking, discard the water and rinse before cooking.
Basic method: rinse lentils well. Place in a saucepan with cold water at a ratio of 1:2.5 (1 cup lentils to 2.5 cups water). Bring to the boil, reduce heat, and simmer for 20 to 25 minutes until tender but still firm to the bite. Do not overcook - Puy lentils lose their texture quickly once past their ideal point. Drain any excess water. Season after cooking, not before - salt added during cooking can toughen the skins.
How to use them
- Warm salad: toss cooked Puy lentils with Dijon mustard vinaigrette, roasted beetroot or pumpkin, fresh herbs, and crumbled feta or goat’s cheese - a classic French combination
- Cold salad: cooled lentils hold their texture for hours, making them ideal for lunchbox salads, grain bowls, and picnic dishes
- Soups and stews: added early to vegetable or broth-based soups where they contribute body and flavour
- Lentil patties and burgers: mashed or partially blended with spices, onion, and egg (or flax egg) as a plant-based patty base
- With roasted vegetables: served warm alongside roasted pumpkin, capsicum, or root vegetables with a herb dressing
- Braised lentils: cooked with bay leaf, thyme, and a splash of red wine for a rich French-style side dish alongside grilled salmon or lamb
