Ceres Organics Yellow Thai Curry Paste is built on a base of fresh aromatic herbs - coriander, lemongrass, galangal, ginger - rounded with cumin, turmeric, and a gentle chilli warmth, then brought together with organic coconut oil and coconut vinegar and sweetened with organic coconut sugar. No artificial colours, no preservatives, no MSG.

Yellow curry sits at the milder end of the Thai curry spectrum. The turmeric gives the paste its golden colour and an earthy, slightly floral note. The lemongrass and galangal provide the fresh, citrus-forward aromatics that distinguish a Thai curry from an Indian one. The coconut sugar balances the heat with a subtle sweetness. The result is a curry that's deeply fragrant and complex without the sharp heat of red or green paste - the right choice for households with mixed heat tolerances, or anyone new to Thai cooking.

How to use it

Basic yellow curry (serves 4): heat a tablespoon of coconut oil in a large pan, add 2 to 3 tablespoons of paste and cook for 1 to 2 minutes until fragrant. Add your choice of protein or vegetables, stir to coat, then add 400ml of coconut cream and simmer for 15 to 20 minutes. Season with fish sauce or tamari and a squeeze of lime. Serve over jasmine rice.

  • Green: medium heat, fresh and herbaceous with kaffir lime, basil, and coriander. The most aromatic of the three
