Friday Hut Market is a small honey producer based in the hinterland behind Byron Bay, started as a roadside experiment in supporting bees and their keepers. Their Active Honey is produced by bees foraging from Jellybush (Leptospermum) - a native Australian plant from the same botanical family as the New Zealand Manuka tree. Jellybush honey is tested and rated using the same MGO (methylglyoxal) system used for Manuka honey, with each batch independently assessed for potency and authenticity.

This batch is certified at MGO 550+ by the University of the Sunshine Coast - one of Australia's recognised testing authorities for active honey. The honey is thick, slow-pouring, and deeply flavoured with the rich, slightly earthy character of Leptospermum nectar.

Storage

Store at room temperature, out of direct sunlight. Like all raw honey, this may naturally crystallise over time - this is a sign of authenticity, not spoilage. To return to liquid, stand the sealed jar in a bowl of warm water and stir gently. Never microwave or heat above 40°C.
