  • Preheat oven at 190°c / 375°f
  • Rinse pre-soaked beans 
  • Add beans to a large pot with 4 cups water; simmer, covered for 45-60 minutes until tender; drain well and cool
  • Rinse millet then pour rinsed millet and 1 cup water into a pot and simmer covered 15-17 minutes or until all the water has been absorbed
  • Heat a medium pan over medium heat and once hot, add 1 tbsp olive oil, garlic and spinach and saute for 2-3 minutes; once soft remove from the pan and keep in strainer
  • Add adzuki beans to a food processor with all remaining ingredients and blend for 1-2 minutes until combined
  • Shape the patties as you like
  • Heat a medium pan over medium heat, once hot, add 1 tbsp olive oil, then add the patties
  • Pan fry on both sides for a few minutes until they get a slight crust
  • Transfer to the oven and bake for 15 minutes or until golden brown
